For Michal Bažalík, winemaking is a combination of craft, culture, tradition and love for the land, which he probably inherited from his ancestors. He took over the old barren vineyards above Svätý Jura a few years ago from the cooperative, and works them together with his family and friends. The vines are farmed using organic methods, and no chemicals are used in vineyards or cellar. “I think that life doesn’t need a lot. I want to live from what this earth gives me. I’m fascinated by creating, creating something from nothing, completely from the ground up. To live in a place where everything is born, to be a part of the whole process. To grow grapes with humility, without chemicals and with care for yourself and the environment. To make good wine from it with joy and to enjoy it with your loved ones. I think that’s how wine should be.

Pesecka Leanka aka Fetesca Regala. A delicate and authentic variety of Central Europe. This wine wild yeast fermented in stainless steel tanks. It’s low alcohol and delicate, fun wine for aperitif or brunch.

Korenika & Moškon is a family-owned winery located in Korte, a village in the heart of Slovenian Istria. The estate is nestled two miles from the Adriatic Sea, with 25 hectares of vineyards and 2.5 hectares of olive trees, all certified organic and Demeter biodynamic. Vineyards are hand harvested at full  ripeness. They continue to practice traditional wine production methods with great passion and commitment. Skin contact maceration and barrel aging are tradition and continue to be important for this family winery.

Bis is a blend of Merlot and Pinot Noir aged in stainless steel. This is a lighter red bursting with sweet & sour cherry fruit, graphite, tobacco, and a earth. The fruit is ripe and delicious with fine and smooth tannins.  Juicy easy going red that drinks like a great pinot noir.

In the heart of the vineyards, 12 km southwest of Beaune, the tall slate roof towers of the Château overlook the hamlet bearing the same name: Melin. Built in 1551 by the Rozereau family, it was aquired in 1999 by its present owners, Hélène and Arnaud Derats, who restored the chateau and also acquired the family winery, which includes 22 hectares of vineyards located in Côtes de Beaune and Côtes de Nuit regions.

In 2000, Arnaud Derats educated as an Engineer and following a 10-year career in the construction industry, was captured by tradition: with his wife Hélène, they bought the Château de Melin, located on the town of AuxeyDuresses, and decided to settle the family estate vineyards. The Château de Melin currently operates 25 hectares of vineyards and produces 22 appellations: 20 in the Côtes-de-Beaune and 2 in the Côtes-de-Nuits areas. The vinification process , the aging and bottling of the wines is accomplished in our cellars at the Château.

The vineyards have been organic farmed since 2009. No pesticides, herbicides, nor chemicals. Alternatively, organic farming entails soil cultivation thru plowing, grass cutting and exclusive use of natural sulfur and copper as treatment against diseases on the vines. The ultimate goal is to obtain good quality grapes, evoking the best the Burgundy soil has to offer. Ecocert certified Organic since 2012.

100% Chardonnay.

The Maurer family has been producing wine for four generations. It was during the Austro-Hungarian Monarchy in the 19th century that they moved from Salzburg to the southern part of then Kingdom of Hungary, nownorthern Serbia. They farm 6 hectares in the Serbian wine region of Szabadka directly south of the HungarianSerbian border, and another 10 acres in the Fruška Gora mountain district in Srijem, Serbia, located 40 miles away from Belgrade and bordered by the Danube River to the north. Organic farming is practiced in all vineyards and harvests are always by hand. Fermentation is with wild yeast in neutral oak barrels or stainless steel tanks. All Maurer wines are unfiltered, unfined, with no sulfites added.

Crazy Lud is a cuvee of local sorts, made in light, drinkable style, it is low alcohol and delicious.

Luc Devot was a cook for 7 years, a fisherman for 3 years, musician, animator, educator. He had many lives before becoming a winemaker. He worked his first harvest with Jean-Louis Tribouley, who introduced Luc to natural wines. In the years that followed, many winemakers settled with similar cultivation and vinification methods. Driven by this momentum, and after training with Loïc Roure from Domaine du possible, he became a volunteer at the “La remise” wine fair. Although Luc had often worked in the vineyard, the three years spent at Philipe Wies winery (Domaine de la petite baigneuse) made him realise the reality of the profession to be a winegrower. Luc’s very first vinification was in 2017 and now he works with 4 hectares of vines. All wines are unfiltered, unfined, with tiny amount of added sulfites.

100% Lledoner Pelut, aka “Hairy Grenache,” a wild, indigenous variant of Grenache Noir.

From Bon Raisin:  “Hairy Grenache, also known as Lledoner Pelut, [is] a variant [of] Grenache Noir and an ancient varietal with it’s origins firmly planted both sides of the Pyrenees mountains in Catalonia. After a slight resurgence in the late 1990s, it’s now only possible to find around 250 hectares in production in France, and almost exclusively in the Languedoc-Roussillon.”

The grapes are hand-harvested and carbonically macerated in stainless steel for 8 days. The wine is pressed and completes fermentation in stainless steel, before being transferred to neutral oak for 7 months. The wine is racked back into neutral oak for one month before bottling unfined, unfiltered with a touch of SO2.

Gordia is an indigenous name for the area above Ankaran, where Andrej Čep and his family have a restaurant with the same name. Their 3.5 hectares of vineyards and winery are less then a kilometer from the Adriatic Sea, and have been farmed organically since 2011. The proximity to the sea and the constant wind gives all the wines a salinity and minerality that balances the fruit flavors perfectly. All wines are produced without the use of chemicals and fermented with native yeasts, unfiltered, unfined and contain under 40ppm total sulfites. The winery has been using Georgian kvevri since 2011, and makes wine in similar style to the traditional Georgian method. Their fresh malvazija is lively and mineral. The pet-nats are refreshing and more complex then most. Their kvevri wine named ‘amfora’ is deep, complex and delicious. It easily rivals some of the best skin contact wines of Slovenia and Italy.

The Uhnak family is strongly linked with the village of Čajkov on the southern slopes of Sitno Volcano, Central Slovakia. They have been growing vine here for more than 500 years. The seal by the Archbishop of Estergom from the year 1666, which entitled our family to trade in wine and agriculture products, is a symbol and a materialization of my ancestors‘ abilities and at the same time it is a challenge for me to stay true to their legacy. The viniculture region under the Sitno Volcano is a magic place where two climates meet. The hot –southern part of Europe (Panon basin Pannonicum) overlaps here with the cold – northern part of Europe (West Carpathians – Carpaticum occidentale). Vineyards under the Sitno Volcano spread mostly over tuff. Soft tuff is volcanic ash and hard andesite is volcanic lava. Volcanic soil is porous and it perfectly absorbs water, gases, and oxygen that are subsequently available to grapevine roots penetrating the volcanic bed. Wild yeastfermented, Unfiltered, Unfined, No added Sulfites.

Eloquent wine with succulent acidic backbone & nutty, savoury touch, ending on raisins and rocks. A wonderful companion for the whole evening, ever-evolving in your glass.

Devín is the child of communist times – somebody in Slovakia once had the idea that we need our own type of Traminer, one that can survive our crazy winters. Thus, this grape was born: son of Traminer, daughter of Rotweisser Veltliner, aromatic yet resilient. Tbh, I never liked the wines it produced, but fate brought me a vineyard with some of it. I thought I’d pull it out as soon as possible, yet time went by and the vines still stood there, intact and proud. So, I dropped the attitude and took up the challenge. Using lower yields, a slightly oxidative elevage and multi-vintage blending, I turned my once-Nemesis into a new friend

Slovenian winery Korenika & Moškon is family-owned and located in Korte, a village in the heart of Slovenian Istria. The estate is nestled two miles from the Adriatic Sea, with 25 hectares of vineyards and 2.5 hectares of olive trees, all certified organic and Demeter biodynamic. Vineyards are hand harvested at full  ripeness. They continue to practice traditional wine production methods with great passion and commitment. Skin contact maceration and barrel aging are tradition and continue to be important for this family winery.

Sulne 2011 is a skin contact cuvee of Malvazija Istarska, Pinot Gris and Chardonnay. Dark amber color. The grapes come from the two cru vineyards Paderno and Pod Kortinca, which are farmed according to biodynamic principles. After hand-picking, the fruits were macerated in stainless steel tanks for 45 days. Then the wine was aged in large oak barrels for 6 years (!) (12 months on the lees). The wine was bottled without filtration or stabilization.

 

Vinification:
45 days on the skins (maceration), without pressing. Fermentation: inox (stainless steel), indigenous yeasts; malolactic fermentation with autochthonous bacteria. Maturation: 12 months on the lees in oak barrels, total in barrels: 6 years.
Unfiltered. Biodynamic – Demeter certification.

Chateau Gaudrelle farms 20 hectares (50 acres) of vineyards in the heart of the Loire Valley. They hand harvest Chenin Blanc vineyards and produce Vouvrey and other wines. As an organic-certified estate, they encourage the biodiversity and we give life back to the ground by working the soils. In order to not tamp them down, they also use the animal traction with a horse in the plot “Clos le Vigneau”. In the cellar, they are dedicated to a low intervention approach.  They harvest and make  wines with biocontrol which means they employ natural mechanism to fight against harmful organisms. Thereby, the sulfur is reduced at the minimum amount. Everything is done to produce expressive white wines to give you more pleasure. Nature and the people are at the heart of our thoughts and we emphasize our evolution by starting to use the biodynamic on one of our plots.

This is a 100% Chenin Blanc pet-nat. Fermented in the bottle and unfiltered. Serve very chilled.
