In the heart of the vineyards, 12 km southwest of Beaune, the tall slate roof towers of the Château overlook the hamlet bearing the same name: Melin. Built in 1551 by the Rozereau family, it was aquired in 1999 by its present owners, Hélène and Arnaud Derats, who restored the chateau and also acquired the family winery, which includes 22 hectares of vineyards located in Côtes de Beaune and Côtes de Nuit regions.

In 2000, Arnaud Derats educated as an Engineer and following a 10-year career in the construction industry, was captured by tradition: with his wife Hélène, they bought the Château de Melin, located on the town of AuxeyDuresses, and decided to settle the family estate vineyards. The Château de Melin currently operates 25 hectares of vineyards and produces 22 appellations: 20 in the Côtes-de-Beaune and 2 in the Côtes-de-Nuits areas. The vinification process , the aging and bottling of the wines is accomplished in our cellars at the Château.

The vineyards have been organic farmed since 2009. No pesticides, herbicides, nor chemicals. Alternatively, organic farming entails soil cultivation thru plowing, grass cutting and exclusive use of natural sulfur and copper as treatment against diseases on the vines. The ultimate goal is to obtain good quality grapes, evoking the best the Burgundy soil has to offer. Ecocert certified Organic since 2012.

100% Pinot Noir. Very colorful, with an intense aromatic expression of blackcurrant berries and other small red or black fruits. Powerful, associating with their tannins an always abundant softness and a good level acidity. Overall, it is a structured wine that will accompany game, braised lamb or red meat in a spicy stew.

Korenika & Moškon is a family-owned winery located in Korte, a village in the heart of Slovenian Istria. Bis is a blend of Merlot and Pinot Noir aged in stainless steel. This is a lighter red bursting with sweet & sour cherry fruit, graphite, tobacco, and a earth. The fruit is ripe and delicious with fine and smooth tannins.  Juicy easy going red that drinks like a great pinot noir.

The Maurer family has been producing wine for four generations. It was during the Austro-Hungarian Monarchy in the 19th century that they moved from Salzburg to the southern part of then Kingdom of Hungary, nownorthern Serbia. They farm 6 hectares in the Serbian wine region of Szabadka directly south of the HungarianSerbian border, and another 10 acres in the Fruška Gora mountain district in Srijem, Serbia, located 40 miles away from Belgrade and bordered by the Danube River to the north. Organic farming is practiced in all vineyards and harvests are always by hand. Fermentation is with wild yeast in neutral oak barrels or stainless steel tanks. All Maurer wines are unfiltered, unfined, with no sulfites added.

Crazy Lud is a cuvee of local sorts, made in light, drinkable style, it is low alcohol and delicious.

Luc Devot was a cook for 7 years, a fisherman for 3 years, musician, animator, educator. He had many lives before becoming a winemaker. He worked his first harvest with Jean-Louis Tribouley, who introduced Luc to natural wines. In the years that followed, many winemakers settled with similar cultivation and vinification methods. Driven by this momentum, and after training with Loïc Roure from Domaine du possible, he became a volunteer at the “La remise” wine fair. Although Luc had often worked in the vineyard, the three years spent at Philipe Wies winery (Domaine de la petite baigneuse) made him realise the reality of the profession to be a winegrower. Luc’s very first vinification was in 2017 and now he works with 4 hectares of vines. All wines are unfiltered, unfined, with tiny amount of added sulfites.

100% Lledoner Pelut, aka “Hairy Grenache,” a wild, indigenous variant of Grenache Noir.

From Bon Raisin:  “Hairy Grenache, also known as Lledoner Pelut, [is] a variant [of] Grenache Noir and an ancient varietal with it’s origins firmly planted both sides of the Pyrenees mountains in Catalonia. After a slight resurgence in the late 1990s, it’s now only possible to find around 250 hectares in production in France, and almost exclusively in the Languedoc-Roussillon.”

The grapes are hand-harvested and carbonically macerated in stainless steel for 8 days. The wine is pressed and completes fermentation in stainless steel, before being transferred to neutral oak for 7 months. The wine is racked back into neutral oak for one month before bottling unfined, unfiltered with a touch of SO2.

Le Quattro Volte is a small winery run by Daniela De Marco, Giampiero Ventura (ex Masseria Perugini) and Dario Brunori located in a beautiful and uncontaminated nature; Calabria. For a long time, this Southern region ranked at the bottom of the winemaking in Italy, but in the last decade, it has established itself in the national wine scene for an unprecedented qualitative rebirth. Located in the village of San Marco Argentano (roughly 30 km from the Tyrrhenian seaside) The vineyards are planted in a range of 200-400 meters above sea level and they are located between 2 natural reserves.  The focus is on indigenous sorts Mantonico and Magliocco. The vineyards are farmed organically and a low intervention approach is taken in the cellar. Chemicals or additives are not used in the farming or winemaking. The wines are bottled unfiltered, unfined with less then 40ppm total sulfites.

Amb Amics is Catalan and means ‘with my friends’. It’s 60% Syrah on decomposed schist with carbonic maceration (10 days), 40% Grenache also on schist soil with carbonic maceration (18 days). The Syrah is aged in barrel for 5 months, then blended with the Grenache in stainless steel tanks for 2 months before bottling.

Explosive, juicy blackberry burst with hints of sweet spices and a eucalyptus finish. Extremly gulpable, it features subtle tannins, complimented by great acidity. Serve lightly chilled, and pair with tapas and friends.

Dzelshavi is a rare variety from western Georgia. It’s produced in traditional Georgian Kvevri method, in which the wild yeast fermentation and aging are done in large clay vessels which are buried in the ground. Bodega Casa Juan is located in Rioja Alavesea, the Basque area of Rioja.  The winery is a converted flour mill, featuring concrete tanks for fermenting and blending the wine and barrels for ageing that are used for up to seven years. These are traditional Riojas in winemaking and spirit, though the site-specificity of their Laguardia and Villabuena vineyards confers a fruit character all its own to these wines. The reserva especial is a special blend of 50% Tempranillo and 50% Mazuelo, that is aged in a different selection of barrels than usual. Some more new oak comes into play, but that is only relative to Angel’s very conservative, light toast, high proportion of older barrels aging regimen. This is the rarest and smallest production of the Lesmos wines, and possibly their very best.

All estate fruit, hand harvested, and carefully vinified with native yeasts, this is a hand sewn wine with the purity, texture and elegance to prove it. Produced from 85% Tempranillo and 15% Mazuelo, the Reserva is a barrel selection of wines that Angel feels can undergo longer aging in barrel and then in bottle. Aged a total of 27 months in barrels, then into concrete for more than a year, the Reserva also sees bottle aging until Angel deems it ready for release.

This wine ramps up the intensity of the Crianza, with more pungent fruit as well as a real spicy and wild quality. In a good vintage, this wine is likely to improve for quite a long time.

The wine has an intensive red-ruby color. On the nose complex and intensive aromas are dominated by fruits. On the palate this well-structured fruitiness vigorously continued. The taste is dominated by ripe red berries, completed by light earthy, mushroomy aromas of the spring forest. Juiciness and fruitiness are further enhanced by velvety tannins. This Frankovka ends with a long lingering aftertaste.

Food pairing: it pairs well with traditional Eastern European roasted duck or goose made with red cabbage and dumplings. Also it pairs well with meals made of small wild animals, such as a wild rabbit ragu, or pheasant.

Claudia Ferrero and her husband/winemaker Pablo Härri’s estate is called the Podere Pascena and it sits in the southwesterly corner of Montalcino where they are bordered by Argiano and Banfi’s Riserva vineyard “Poggio all’Oro”. Saperavi is the most important Georgian red variety. It’s name literally means paint named after its deep dark skin. It makes an intensely deep colored, high acid and strong flavored wine. It is one of the few grape varieties which actually have red color pigment in the pulp as well as the skin. Imeretian Saperavi is crisp, fruity and exciting. Imeretian Saperavi is easier drinking and less alcohol typically compared to Kakheti Saperavi.

Wild yeast fermented and aged in ancient clay vessels called kvevri. This wine is dark, exotic and unusual with notes of dark fruits, earth and spices.

Gabriel is an Orthodox Christian monk who lived in the 6th century monastery Shio-Mgvime for twenty-seven years. There, he tended crops and learned to make wine and cheese while becoming a blacksmith. He then returned to his childhood home and began making traditional, natural wine with the help of friends. This wine is completely handmade, using an ancient method in which fermentation and aging is done in buried clay vessels called Qvevri. Unfiltered.

A Qvevri (pitcher) is a large clay amphora-like vessel, that is traditionally buried in the ground up to its neck, and in which wine is fermented and stored. After the fermentation process, which occurs naturally without any additives, the kvevri is sealed with a ceramic lid and then buried in soil. The wine is left to mature for up to six months before the Qvevri is opened and the unfiltered but clear wine is ready to be bottled. Georgia’s traditional kvevri winemaking method is listed in the UNESCO intangible cultural heritage list.

100% Saperavi. A deep, dark almost black wine. Pomegranate, sour cherries, cocoa with good structure and tannins. Do Re Mi wines are all made in Qvevri which are handmade, large buried clay vessels used to ferment and age the wine. Qvevri range in size from 250 liters to 2500 liters. The lightly pressed juice is fermented with the skins, with wild yeast and free from any additives. After fermentation is finished, the Qvevri are sealed and covered with soil until Spring time. During the process, the solids in the wine slowly drop to the bottom of the qvevri and the clear wine rises to the top. When temperatures drop in December and January, the live yeast dies, the wine is transferred to new qvevri and left to age for more months. In the spring time the wine is drunk during big celebrations called Supras and leftover is bottled.
