Matija Žerjav a. k. a. Matic is the third generation of winemakers, and was only 24 when he took over the management of the winery. In the predominantly white wine region of Štajerska, close to the borders with Austria and Hungary, Matic cultivates 9 hectares of vineyards using organic and biodynamic methods.

 

In a region known for their steely fresh white wines, Matic thought to produce a single barrel each of Chardonnay and Laški Rizling. His work paid off as the wines sold out very quickly. He experimented with skin-contact wines and aging wines in clay amphora rather than the traditional steel or wood. Matic also makes a few floral, yet crisp and savory white wines. His grassy and savory Sauvignon Blanc falls on the opposite side of the spectrum from the intense citrus bombs of New Zealand.

Matic also successfully plays with local indigenous varieties: Kerner, Šipon (or Furmint) and Pinot Gris. His wines are harmonious, fresh, fruity and crispy in the mouth. The maceration is done in stainless steel tanks, after which the wine remains on the fine sediment for a while. They keep the wines in an old cellar from 1852, completely underground, so that a constant temperature can be maintained throughout the year from 50°F to 54°F.

 

Unique terroir

The winemaking area in Štajerska is located in the so-called ‘mountain wine zone‘, which of course can get very cold. Harsh winter is good for the vines as it disinfects the soil. The essential factor is a sharp contrast between warm days and cool nights.

Matic explained that the more marl in the soil, the less water the vines have, causing their roots to dig deeper and deeper. There are a lot of mineral aspects to these wines – steely and salty with great acidity. No water systems are in place, as well as no fertilizers, just vines struggling in the best way, surviving in harmony with nature.

 

Great natural wines

Matic exclaimed: ‘We work only with what nature gives us. So, no chemicals in our wines’. He chooses to use organic, sustainable methods and native wild yeasts not because of the natural label or trend, but because he firmly and unconditionally believes this is how wine should be made.

Matic’s Šipon is a true gem of the Slovenia’s Štajerska. Coming from nearly 50-year-old vineyards this wine shows the true characteristics of the grape, with beautiful stone fruit notes at first backed by a burst of acidity that makes your mouth water and crave more. Notes of fresh orange and lemon zest dance in the back palate. Aged in steel on the fine lees, this wine has finesse and body to back it all up.

Matic follows principles of natural winemaking which are the same like when his grandfather was making the wine. His philosophy is that every wine that he makes, he can drink without any fear of a headache or anything else.

100% Riesling, organic farmed and hand harvested in Slovenia by young winemaker Matic. Wild yeast fermented and aged in clay amphora. The juice and skins ferment and age for 200+ days in amphora, afterwards the wine is bottled unfiltered with no added sulfites. It’s slightly orange in color with some cloudiness. It’s very easy to drink with light and well integrated tannins, excellent acidity and tons of flavor. A special wine by any measure.

Petillant Naturel, or “Pet Nat,” is a natural sparkling wine, wild yeast fermented and aged in the bottle. This winemaking method is ancient, and the first method used to produce sparkling wines. It’s also called Method Ancestral, the method of our ancestors. Delicious mineral and fruit notes of the old vine Šipon are integrated with yeast notes from bottle fermentation. Flavors of citrus fruits and notes of bread, cookies, spice, and sometimes beer or cider flavors are noticeable. Cloudy, pale white in color, Matic describes this wine as “one funky piece of winemaking!” It’s a consistent crowd favorite and our essential sparkling wine.

This Pet Nat is a special and exclusive wine from young Slovenian producer named Matic. Organic and biodynamic farmed Riesling, hand harvested and wild yeast fermented and aged for 22 days on the skins in a clay Amfora. Unfiltered, no added sulfites.  This wine is a fresh, dry sparkling that will reward the adventurous drinkers. Herbal and earthy notes with some fresh peach, great acidity, tons of flavor and complexity. Serve well chilled and gently turn bottle upside down and roll bottle before opening. Excellent as a party starter or with light meals.

Kerner is a deliciously fruity, medium bodied white wine. Often found in vineyards throughout Germany, Austria, Northern Italy, and Switzerland, it is a cross between Riesling and Schiava. Matic’s Kerner is lively and fun, showing floral notes as well as the acidic and mineral backbone. Coming from a 27-year-old vineyard, the fruit is mature enough to produce excellent fruit. All organically / biodynamically farmed, the wine is rested on the skins for 36 hours after it is gently pressed. It then ages for six months on the fine lees. This adds texture and complexity to the wine. Perfect for summer, this wine is outstanding on its own or paired with fish, salads, and grilled meats.

Šipon (also known as Furmint) is a native grape found mostly in Slovenia, Croatia, and Hungary. In Hungary’s famous Tokaj region, Šipon is known as Furmint, and it is the main grape of Tokaj wines. Matic Šipon comes from his nearly 50 year old vines in Štajerska (Styria) region . Beautiful stone fruit notes and mouthwatering acidity make it a perfect food wine. A delicious and well made Pinot Gris from a small producer. Skin contact of 48 hours gives the wine a beautiful bronze color with a slight pinkish hue. Dry farmed from a single vineyard and produced with organic and biodynamic methods. Notes of white cherries, melon, and quince are present. With a lush mouthfeel this wine is perfect with fish, chicken and light fare but has the body for steak tacos, chipotle sauces, and spicier Indian food. A delicious and versatile wine.
